Healthy summer recipe

Eating healthily and giving your body all the nutrients it needs means that you feel great and look great, too. Energy levels, sleep quality and your skin all benefit- along with your waist line!

Here’s a simple and delicious summer lunch as an alternative to those boring salads. These wraps are packed with magnesium, phosphor and manganese in addition to vitamins and protein.

Supergrains in lettuce wraps with green tahini dressing (recipe from Noel Road)

Serves 2
little gem lettuce leaves (or other lettuce of choice)
100g quinoa
50 g millet
2 tbsp coconut oil
1/2 onion, minced
1 lg garlic clove, minced
2 tsp mixed dried green herbs
350ml vegetable stock
100ml water, salt to taste
assorted seeds to top (optional)

Green tahini dressing
2 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
1-2 tbsp tahini
1/2 ripe avocado
juice of 1 lemon
125ml water (plus more, depending on desired consistency)
salt and black pepper to taste
